The Bikkurei Yaakov cites the Sefer Knesses Hagdola who says that we give Chosson Torah on Simchas Torah to an acutal chosson. But how can you have a chosson on simchas Torah - we are not allowed to get married on succos? The Bikkurei Yaakov cites an explanation that the chosson will be getting married the next week. So we see that a chosson is called a chosson even before the wedding.
The Rebbe Shlita offered another היכי תמצא how you can have a chosson on Simchas Torah - The Rambam says that if one married two woman at once, he has one week of sheva brachos with each independently. So if a man married 2 woman before Succos - he can be during his sheva brachos on Simchas Torah with wife number 2.

Rav Soloveitchik was of the opinion that until the actual marriage he is not a chosson. Therefore - he wouldn't put ashes on a chossons head [Bava Basra 60b] until after the nisuin [Nefesh HaRav Page 260].
He also explained that when a chosson walks to the chuppah we rise NOT because he is a מלך [as חתן דומה למלך] but because he is going to perform a mitzva [see Bikkurim 3/3].
