In havdala we say המבדיל בין קודש לחול בין אור לחושך בין ישראל לעמים בין יום השביעי לששת ימי המעשה.

Hashem separates between [pay attention - this is critical] two categories. One category is "holiness", "light", "Jews" and "Shabbos". The other category includes "secular", "darkness", the " עמים", "six days of the week".

This bracha expresses our קדושה סגולית [see previous post]. When we say havdala and enter into a week filled with secular pursuits, darkness [עלמא דשיקרא - a world of intractable falsehood], surrounded by people who have different values than we do [אנו משכימים והם משכים אנו משכימים לדברי תורה והם משכימים לדברים בטלים], we are bid to remember that our essence is holy.

[By the way - when Rav Charlap would say havdala, he would say קודש, אור, ישראל and יום שביעי aloud while חול, חושך, עמים and ששת ימי המעשה would be said quietly, as recorded in his grandsons biography.]
