One important rule in Unkelos is that he tries to distance any implication of physicality in relation to Hashem [הגשמה]. The Rambam [מורה נבוכים ח"א פכ"ז] praises him for this.
One example:
שמות ג':י"ב
וַיֹּ֙אמֶר֙ כִּֽי־אֶֽהְיֶ֣ה עִמָּ֔ךְ
"וַאֲמַר אֲרֵי יְהֵי מֵימְרִי בְּסַעֲדָךְ"
The pasuk says that I [Hashem] will be with you. Unkelos renders it that my words will help you.
